Why fiat currency over precious metals-backed currency?

Can anyone make an intelligent argument defending fiat currency over gold or silver backed currency? Also, why the hell does the U.S. Government have to pay interest on Dollars printed by the Federal Reserve? Didn't our Constitution give solely Congress the power to print and dictate the value of the Dollar?
